The ancient medieval quarter of Segorbe, one of the largest towns in the province of Castellón, captivates visitors right from the word go. Its tangle of narrow streets and little squares will, from 4th February to 7th March, be offering all the flavour of the area’s traditional cuisine at the XIII Gastronomy Fair of Alto Palancia. Over the next few weekends, guisos, ollas (different kinds of stews) and popular centuries-old recipes will whet the appetite of even the most demanding palates. Up to 27 restaurants will be serving homemade dishes representative of the thirty or so municipalities dotted around these fertile lands, bathed by the River Palancia.

Make the most of the succulent opportunity Segorbe offers to discover its Aqueduct dating from the 14th Century, or fortresses such as the millennial Estrella Castle, which turns your gaze to the Middle Ages. On the horizon, dominated by the beauty of natural landscapes such as the Sierra Calderona and Sierra Espadán mountains, you’ll also find magical walks and anthological places such as the Sanctuary of the Holy Cave in Altura and the Bride’s Leap waterfall in Navajas.
